What are some good Minecraft minigames out there, on what servers also, that would be good for YouTube content? I will most likely be playing on my own or playing with two other people at the least.
Well theres multiple options, find a good server and stick with it, play singleplayer, or play with a recording group. A buddy of mine and I are recording a series, and I'll ask him, if you'd like, to invite you. Its a whitelisted server.

Playing mini games are good for if you want a quick fun video but isn't all that great to try and make a series out of it. For a series, I would suggest finding a modpack you like, or playing vanilla with a goal in mind.
Also to keep people watching, make sure you edited your video in a good style. It doesn't have to be super, it can be your own style. But the one thing that puts me off is when someone just mashes a whole bunch of gameplay without thinking of a story to tell in mind.

Some excellent advice right here. For that reason, on my channel, because I love food and Pam's Harvestcraft, I decided to start a survival series dedicated to that. The goal is to craft every single dish in the mod! I call it Kitchen Quest.
To make vanilla survival work, you need to add something unique to it. A touch only you can bring to it.
