The difference between normal Endermen and Maltese Endermen, demonstrated by Vyyr (From my Tumblr blog AskVyyr) and Imani (Now in Ask-the-Maltese-Endermen). Imani is a very average example of the subspecies.
The most apparent difference is the presence of fur. Maltese Endermen are covered in thick, soft, dense fur (The texture being something like a chinchilla but longer). Coloration is also very obvious. Normal Endermen are generally black, though can be lighter in color with markings, though this is rather rare. Maltese Endermen are usually a soft blue grey with black spots and/or stripes.
Next is the build. Normal Endermen are smaller and skinnier then Maltese Endermen. Normal Endermen are more attuned to their supernatural/energy side. Maltese Endermen more attuned with their solid flesh side. Maltese Endermen are generally bigger, and a bit thicker in build. Some of this bulk comes from their fur, but in general they are less thin.
Their ears are bigger, and more mobile, and their hands and feet more paw like with clear pads. Normal Endermen do not have pads, the feet are less paw like.
Maltese hair is fluffier and slightly furlike. Maltese have external spines that are always visible; normal Endermen’s spines don’t show up unless they bring them out or are angry or frightened.
Normal Enders aren’t as comfortable on all fours as Maltese Endermen, who have slightly shorter legs. They have thick pads on their hands and feet, allowing them to run with ease on all fours.
Maltese Endermen spend over half of their time on all fours, whereas normal Endermen only get on all fours when charging, or running. Even then, they usually do so on two feet. They are noticeably more awkward and slow on all fours.
Because of the ability to run comfortably on all fours, a Maltese Enderman can outpace a normal Enderman with ease. Reaching speeds of 120-130 miles per hour on all fours, a Maltese Enderman can cover a lot of distance in a short amount of time. Their run is fast and smooth, taking full advantage of the grip provided by their claws and their flexible spines to achieve these speeds quickly. This is due to them being closer to the build of the Endermen’s quadrupedal ancestors. Atavism serving as an advantage for the subspecies. A normal Enderman can’t get over 80 miles per hour on all fours.
Maltese Endermen prefer to hunt and eat solid food whereas normal Endermen generally go more for energy. This is the reason for their different builds.
Maltese Endermen are built to hunt and to run. They don’t teleport as often as normal Endermen, though they are able to teleport further a limited number of times.
I don't like the fangs poking out the Maltese Enderman's mouth. I've always seen Endermen as dark and mysterious, with a trace of arrogant elegance, not some killing machine.
Alos, 120-130 miles an hour? I don't know much about anatomy, but that thing does not look like it is capable of such a feat.
Other than those two qualms, I'm more than impressed. c:

For the fangs, Maltese are more attuned to their physical/flesh side and as such are hunters. They can either rest behind the lip or over it, I just sometimes draw it over the lip from personal preference. I think it's kinda cute in an odd way. Isn't always like that, just a little bit of my personal style.
I do have them as hunters, and highly instinct driven, especially Maltese. I was going for the enigmatic and dangerous beauty of the sleek jaguar for inspiration. (A LOT of my Ender headcanons are feline inspired, with a bit of drow, hyena, and other creatures thrown in along with my own obsession with world building and species creation) I always imagined the same, actually, elegant and fast, smooth and graceful but deadly when provoked.
Maltese are actually more docile than normal Enderman. Generally more curious, and won't attack if looked at. Though Endermen in general, at least for my headcanons, only attack if threatened (Attacking them, their young, or their loved ones) and even then they generally just teleport to safety.
As for the fast speeds, part of this is that they are not fully physical in nature. They are from another dimension, thus things are different. This is why they display strength and speed beyond what they seem to be able to achieve. While they are tall, they are incredibly light and extremely flexible, giving them a powerful cheetah-like run. If they were entirely of our world it would, in fact, be impossible.
