I cannot allocate more ram to my Minecraft vanilla server using the bat file for some reason. I have 16 GB and would like to put 5-6 GB of ram but the bat file won't change anything. The server only uses 50-300 MB of ram which isn't enough cause it always overloads with only 1 player on it.
If you're simply starting the .jar file on its own, you're not actually allocating more RAM to it at all. What's the error that you're getting when you try to use your .bat file?

This is the command I use:
java -Xmx5G -Xms5G -jar minecraft_server.jar nogui
I've tried the same command with 5120M instead of 5G and still had the same problem.
I've reinstalled java twice and installed every other previous java version.

Are you actually starting the server by doubleclicking the .bat file?
When i try the bat file it says an error so no, im using the jar file i downloaded.

Put "pause" at the end of your startup script and post the error log.
