Thank you everyone for such bounteous advice! I promise I'm taking the time to read all of it! There's just too much good to reply to all of it individually. So again, thank you. So many of your great tips are swirling around my head!
Today, I'm going to grab some recording software (I've already got a nice headset) and start recording some test videos. After recording them, I think I'll let them sit for a day or two, so I can watch them with fresh eyes and ears later. That will also give me a chance to check out the most recent snapshot and maybe find a good seed.
So thanks to you guys, my plan is much more real than it was yesterday.

Very true! And I'm happy to say that I recorded almost two hours of test videos earlier today! After going through it, I'm feeling much more confident (though I was a little surprised by how my voice actually sounds). I'm all set up to record my first episode in a new world tomorrow. I'm very excited, which is a great sign.
Have some form of backup material in the event that you don't have anything to say. Like real world topics or old Minecraft stories.
Considering you said you're really good at video editing, adding your own effects into your videos in post would actually be really cool to see. Like snow piling up on glass windows. Or rising smoke from a fire.
Every once in a while you could invite a guest to play beside you. Of course, if you don't bounce off each other very well it won't be very fun.
