I attempt to use the best grammar possible when posting to a forum, but when talking to mates on Facebook or something, I won't go full retard but I'll use a lot more acronyms and be much more lazy with my typing.

There's a pretty simple reason why correct grammar and spelling is important on forums. It's because the more mistakes your post has, the dumber, and more immature you look.
It's funny how accurate it is too, I could probably make a chart showing the age and IQ of a person in relation to their grammar and spelling.
You might say you don't care what strangers on the internet think of you, and that's fine. Just don't complain when everybody talks to you like you're an idiot and 12 years old.
Besides, it doesn't hurt to use correct grammar. You do the reader a favor by making their reading of your post a little more enjoyable.
When it comes to Omegle and other instant messaging services, I usually don't type with much capitalization and punctuation. It's because your every message will usually be only read once by a single person.
But sometimes, usually at the start of a conversation, I do. If it carries on long enough I'll stop it, because it takes me an extra fraction of a second.
Sometimes I might even start again in the same conversation for no real reason, It's not really a habit, and I can't say it's subconscious either.
It'd be more sensible to infer how old someone is by how they write, and not solely on grammar, it's not accurate at all either; someone's intellect cannot be defined simply through the text their typing on a forum.
The grammar nazis that call people 12 because of how well you type on a forum just makes them look retarded, why correct it when the reader could clearly understand what you posted, yet spam **** about you?
I use correct grammar on forums and such, but when its just chatting with mates or texting I just get lazy. Not full retard like "hi i herd u liek mudkipz" but its like "hey, whats up".
