This is the first year without mosquitoes flying around during night.
Considering the city is pretty much surrounded by the Danube, two rivers, two ponds and one city-sized lake.
There are a bunch of bats that live near my house so we never have mosquitos. This was amazing after coming from a house where you had to put on bug spray everytime you wanted to go outside at night.

didn't even go on the busses or the underground. like, who even does that? everybody who goes to London ever uses some mode of transport. nobody walks. not even londoners walk. it's too big of a city. then when we got back, I immidiately walked to the shop and back. is there something wrong with me? apparently you're supposed to take the car everywhere you go or something, or at least that's what americans keep telling me.

So I just finished up cutting a few tatters for some homemade frenchie fries that I plan on making for dinner, and I am pretty set in my current method of preparation and cooking for these; but I was wondering a few things. I submerged the tatters in water and I just put them in the fridge, is that a good idea or should I leave them at room temperature? Does it even matter? Also, after I fry them the first time then wait a few hours to fry them the final time, should I put them back in the fridge or leave them in room temperature until I am ready to fry them again?
I used to just cut up the frenchie fries and put them immediately in the deep fryer at 375F but right now I am looking to step up my frenchie fry game since they come out soggy and kind of bleh. Right now I am soaking them in water before going to bed (5:16AM pls end me) to get rid of the excess starch and I am going to fry them at 300F when I wake up at 1:30PM, then let them set for a few hours until I fry them again at 350F. So I guess it is a bit late to be asking this question but it will be good to know for future preparation of frenchie fries.

You don't need to put them back in the fridge once you've pre-cooked the fries. Just remove them from the oil when they are cooked and soft, but not browned yet, Then drain them on a paper towel. Putting them in the fridge while you wait for the second cook may ruin it. But when you are ready to cook them again, turn the heat up a bit and fry them until golden brown. Remove them, and drain them on a paper towel again. Also note that the first time you cook them you should have the oil at a lesser heat than the second time.
Also, if you are doing a large amount of fries, don't cook the entire lot at once, do them in smaller portions to ensure that they are all evenly cooked. The first time you cook them (just to soften them), keep the heat at about 300 F. the second time about 400 F.
And yeah, soaking them in water for a while before you start the process is a good idea, and at that stage it doesn't matter if they are refrigerated or not. just be sure to dry them off in paper towel before chucking them in the oil. (use fresh paper towels in each step of the process)

By the time I saw your post I already put the pre-cooked fries in the fridge (they've been in there for over an hour already). Oh well, if it does mess them up at least I know what to do the next time I make these. I did do the rest of the stuff pretty spot on with what you said though, but I heard to deep fry them at 350 for the second time. Guess I'll make the first batch at 350, then fry them at a higher temperature if they don't turn out right. Thanks for the advice. c:
EDIT: Just finished dinner about an hour ago and the fries I cooked were slightly crispy on the outside and were fluffy on the inside. Definitely going to experiment around with different methods of preparation and cooking french fries since buying a bag of russet potatoes from Sam's Club is cheaper than buying the frozen stuff.

Oh well, if it does mess them up at least I know what to do the next time I make these. I did do the rest of the stuff pretty spot on with what you said though, but I heard to deep fry them at 350 for the second time.
