Nowadays it takes quite a lot of dedication and commitment to become successful. I guess people want to see effort being put into videos being produced. I find plenty of cool airsoft videos by people with less than 100 subscribers.
There are many bigger channels that play the same games as other smaller channels but these bigger channels have more professional content and they make videos on a schedule since it's their way of making money also a lot of smaller channels are kids and their videos are shorter and of lesser quality. People are more likely to go to the bigger channels because they know they will provide good content. For example, imagine you're buying a phone and you have the option to buy an iPhone from Apple or another phone from a smaller company that you've never heard of, you'd most likely choose the one made by a well known brand.

Watching videos is time, and everyone's got a finite amount of time they can devote to YouTube. Watching smaller YouTubers is a risk... you're not sure if they'll be entertaining, if they'll be consistent with their uploads, etc. So, I think that's why most people who like watching YouTube for fun tend to gravitate toward the larger YouTubers.
I don't think it's just about making content that appeals to a certain audience. I've watched some smaller YouTubers who linked their videos here on MinecraftForum, and I thought they were just as entertaining as the big names. Maybe it has something to do with marketing, and I'm sure there's an element of luck.
But yeah, getting big on YouTube is definitely an uphill battle. Any gamer would love to make their living off of uploading videos of themselves playing games.

Having a (relatively) small audience can sometimes be a good thing. One YouTuber I'm subscribed to interacts with his audience in such a way that wouldn't be possible if he had a large audience.
For example, when he's playing through a game, and the video ends with a choice (e.g. on what level to play), he'll hold a vote in the comments, and let the viewers decide what he's going to do next. If he got much more than a few hundred views per video, that really wouldn't be possible.
To answer your question, the reason it's so hard to grow on YouTube is because it is the single biggest video site on the Internet, and there's tons of competition.
Just saturation. Even if you created something totally new and originial, there's millions upon millions of videos that are covering yours up. Anyone with a camera and internet can upload to YouTube, so it's like asking why isn't everyone famous.
If everyone's popular, no ones popular.

It's hard because everyone is trying to get famous on youtube. So their is a lot of people trying to one up each other. But, what you have to do is simply enjoy youtube, if your not growing then fine, just wait keep making, and having fun!

Because his videos are original and funny. I don't know of any other YouTubers who throw eggs for a living.
Anyone can do that, how it got famous must have been an insane chance. Because his videos have bad quality, he never explains what he does in them, and it's pointless.
Admitted, it's funny sometimes, but he does the exact same thing in his videos all the time, how is that original? Also sometimes it's just disgusting.

You can even see their personality evolve the more their channel evolves. But once a channel get's famous (like SkydoesMinecrafr) you end up loosing interest and drag yourself away from it.

I actually used to watch his mod reviews. His humor just got worse and worse until I hit the oh-so-magical "unsubscribe" button.
Mainly is because when you are searching something on youtube instead of showing you any video off that topic they sent you a video of the big youtubers even whn it is not on toppic.

People say you have to full commitment and success to run a youtube channel, and that you need to put a lot of effort and quality into your videos.
But someone explain to me how on earth HowToBasic became successful in the first place?

Look at jacksfilms. He has over 1.5M subscribers, and yet is struggling to get 100 in a month.
