So should I just draw a squiggly line and call it that? Because technically the whole of that map is supposed to be unexplored, only a part of it would be ultimately "known". When I do the culture map I'll draw in the boundaries for the Empire and its neighbor's known world.
I don't want things to go too wild and superhuman. When I say I want race I sort of want familiar things like in classical myth. Personally, I feel that very often going into new, pop-fantasy races like fire demons/elementals or anything that might be a mish-mash of syllables with apostrophes separating them gets silly. As well, some folk here have sort of made the point that these creatures can become considerably goofy. I don't want goofy, not in that area.
But what could be done is perhaps some manner of unexplored-world shaman who manages to make a fungal curse, deal to maybe mess up a colony or something in his madness. But not full blown Mario Toads.
As per the culture map: cultures would be mapped out on vague, umbrella terms. Players may create or explore cultural sub-types within the cultural region as they see fit. For an example: an area marked off as being say, Asiatic (for example) could have Korean-like, Chinese-like, Japanese-like, and so on sub-sets within. Same rules apply in the "core" starting region, where I will mark one over-arcing culture and the differences within will be explored as we go.
I don't want to bog this down too much in pre-planning or it might ruin any incentive to actually RP and flesh out these areas, which can always be mapped in greater detail later on.

Think old Age of Exploration maps.
The brave Goat riders of Cockis.
All we need now are super German stereotypes and that'll convince Huggles to post.
We can't get Huggles to post unless we promise pickelhaubes and beer and schnitzel.
Time to break out the Poles and Pontic Greeks.
The Pakistanis and the Ugandans.
We'd prefer humanoids... I guess if you have another idea, suggest it and see what happens.

Not Arab enough. Needs more high nose bridges, and possibly beards.
