Opeth, Enslaved(probably my #1 favorite band), Decapitated, Satyricon, Nile, 1349, Dark Tranquility, Strapping Young Lad(Devin Townsend in general is cool), Vintersorg, Voivod, Epica, Borknagar, Akercocke
I could go on and on, but these are the bands that I will go out of my way to get new music from.
Side Note: A good metal band to play during Minecraft is Agalloch. There's a good amount of black metal in them, but they are subtle enough that their music doesn't interfere with the game. I find that when the music is too chaotic, it is hard to hear what is going on in the game. YMMV, of course.
Ok metal thread, I need your help. I've been going on a huge metal kick (which is strange as I just came off a long jazz obsession), and I need to know what to get... my tastes are really particular and I'm not sure where to go.

I hate Metallica from Ride the Lightning to the Black Album, but I like the other stuff

Asmegin.The first album(Hin Vordendesod & So) is awesome. Best folk metal album I own by a mile.

Enslaved.(Earlier albums are pure viking metal. Newer ones are more prog/black.)
There's also Rotting Christ. They're Greek. Not exactly viking, but worth a listen.
I like Grotesque. They have a lot of variety within an individual song, unlike most death metal bands. And they manage to do this without diluting the heaviness with excessive melody like modern deathcore bands do.
After listening to it, almost every other death metal band seems repetitive, even Meshuggah, which has unique songs, but not that much variety within each individual song.
If you wanna check them out, my favorite song is Church of the Pentagram.. you should probably skip to :45 in the song though, cause they have some ambient crap in the beginning for some reason. But then it gets awesome.

I can't believe I didn't know about them before. Think Amon Amarth meets Wintersun or Ensiferum.

I love metal! I especially have a thing for power and folk metal. Viking metal aswell, sometimes death... ah well here's a couple of the bands I love:
