I am thinking about building a new PC, and below is what I want from Minecraft
Playing Multiplayer Minecraft on a 512x512 texture pack, highest settings for looks, while Recording with OBS at 720p 60FPS minimum (Would prefer 1080p) And I want to be doing all that 100 Frames+
Could an Overclocked i5-7600k paired with a GTX 1060 3GB and 16GB Ram handle that?
Probably, that's quite a tall order though. I assume those are the specs of a computer you want to buy. If you already have the computer then go ahead and try it.

I will possibly overclock the CPU, and like I said before I'll most likely upgrade to 16GB a few months after the PC is built
That should do very well. The only part I'm not 100% sure of would be the graphics card; I'll see what I can find out.
