Are you AT ALL willing to buy used parts? Believe me, $160 will go much further in used parts than with new parts.
I built an HTPC out of used parts, and it had an i3-3220, 8GB of ram, GT 740, 1TB hard drive, and a new 500W PSU. Total cost was $190 (including the GPU). $160 can get you an i3, decent motherboard, 8gb of ram, and a 500W PSU.
The CPU you listed in your build is not really good at all. An older i3 will score literally double the single core performance as the 5350, which is what matters in Minecraft.
However if you wanna go new, this is still MUCH better than what you have:
I put 4gb of ram to keep it under budget, and for Minecraft it's still perfectly fine, but if you can spend another $12 and get another 4gb of ram, that would be good.
