Even with highly graphical intensive mods like shaders and/or high resolution texture packs it wouldn't really matter at that resolution. All VRAM is is RAM that stores video/image data (hence the V for video). Higher resolutions require more video/image to hold while it buffers from processing from CPU to GPU. At regular resolutions like 1080p, the main culprit becomes how fast that image data can be processed rather than how much you can hold. Again, VRAM is not an indication on how good a video card is. A 2GB GT 730 is obviously not even close to the level of performance as a GTX 960. At standard 1080p, 2GB is fine. The thing that'll really bite you in performance in this case is both the GPU speed and the CPU (because Minecraft is very CPU intensive with lots of mods).

No idea. It would obviously vary depending on what mods you are running. With just shaders and optifine I have seen my Minecraft spike to over 3.5GB.

More than enough for standard 1080p or 1440p gaming (assuming the GPU is adequate enough as VRAM is not a measurement of performance).
