Go to settings, find About device (or similar) and find the version, e.g. 4.4.2 or 5.1.1 etc
If you are running Android 4.4 or below, you will need to root your device.
To root your device, you MAY void your warranty, and COULD brick your device. Proceed with caution. There are various apps and methods to root your device. I recommend TOWELROOT or KINGOROOT.
If you are running Android 5 or above, you can install a screen recorder from the Play Store
Simple search the Play Store for SCREEN RECORDER and I recommend installing Lolipop Screen Recorder.
(I hope I don't get banned for suggesting rooting...)

its a 4.4.2 and was pre-owned so warranty is no longer valid anyway but I imagine by "brick up" that it may kill the tablet? If thats the case then I'll
pass. Getting a 5.1+ sounds a bit more promising, of course.

As long as you do it right the first time, you'll have no problems.
I'm using a foneso android tablet and was wondering exactly how to make videos such as lets plays. What I need to know is what types of apps are
available to do this and do I need anything special like a capture card in order to make videos? Basically I just want to record on-screen gameplay
and I'm not entirely certain how to do that. Any help is appreciated. Thanks in advance.

sounds like I need to do research if it needs to be 100% correct the first time around. I may try it I may not. I spent good money on that thing and I
don't want to kill it first thing.
