The only "proof" I have is that I can run Minecraft on a Dell Inspiron 15 from 2009 with a Pentium. The CPU isn't even maxed out, but it lags extremely due to the integrated GPU.
I have a Radeon R9-270 and 8gb DDR3 1333 RAM and an AMD FX-6300 3.5Ghz and I get 50 fps on vanilla. Minecraft is unoptimised to say the least and the processor does a lot of the work.
I have a FX 8150 which has lower single-thread performance (which is what matters with MC) and a HD 7950 and I get more FPS. Your graphics card is obviously staying at idle clocks because it doesn't think Minecraft is intense.

You saying "but with a GPU runs better" implies that you can run it without a GPU. That isn't true, without a GPU nothing would display on your screen.
The truth is, Minecraft is not intense at all. As long as you have a decent CPU and GPU you won't have issues.
run them both on exact same settings on pure vanilla, put FPS to unlimited and do them both with and without optifine. Preferably no intel HD too, it isn't even a real graphics card.

Vanilla unlimited FPS is actually limited.
Same settings does not matter the GPU Runs better than the CPU's GPU at a more taxing load
And your (obviously scientific) analysis is worth anything?
You upgraded from a decent CPU to a high end CPU (with iGPU, mind you) and got a small FPS improvement, whereas I upgraded from a mediocre GPU to a high end graphics card and got an enormous boost. Still failing to see how your point is anything but disproved.

What proof do you have on that? None, because it isn't true.
Well, it can vary. Obviously you aren't going to be pushing your GPU much unless you have a shaders mod and or big texture pack.

Because the processor is running at idle speeds and the CPU usage is only around 15-20%.

Adding it as a 3D program in Catalyst Control Center fixes it sometimes, although not always.

3570K + 7870 XT, 60-75 FPS with 256x texture pack, fancy graphics, Normal + 48 render distance. Alternatively 35 FPS with SEUS v8 and fast graphics.
So no, a decent GPU does matter.
