The only thing that truly sucks about Minecraft as far as creativity is concerned, is many things you can build wouldn't really serve any purpose.
Sure, you can build a baseball stadium, but unless you use mods and have enough players on the server, the baseball stadium would be useless.
You could have a colosseum build for duels and free for all fights, that would work.
Horse racing stadiums would work, because horses exist in Minecraft,
Parkour competitions, carnivals with circuses and minecart races would work too.
But the vast majority of Olympic style stadiums would have no function,
they're just there on your world, empty and dull other than looking cool.
You can build palaces or castles, they serve the same purpose as any house would in survival, they protect you from hostile mobs.
For many people though this makes hardcore mode too easy, since castles or palaces don't offer any more protection than smaller builds.
In fact smaller builds are probably better for survival because they cost less resources and take less time to finish.
