I know you posted this a week ago but I'll answer your questions as I've considered this myself with the mods I've covered months back for Java Edition.
1.I'd say accessibility settings, the Adaptive controller or other methods. I've seen some mods for the Java Edition that do chat to images like here: https://www.curseforge.com/minecraft/mc-mods/pictocraft and Speech to movement like here: https://www.curseforge.com/minecraft/mc-mods/speechcraft-fabric . I don't see it happening for Bedrock but it would be interesting for those with motor disabilities or language disabilities. The adaptive controller support seems more believable though.
2.Hard to say really, it could but I don't know for sure.
3.For the Adaptive controller yes, for the other methods I came across that would be great solution I think so they aren't much a 'controller' but more so another method to use like a Microphone to play the game and chat to images being good for communication between players disabled and not.

I am doing a school project about distributing video games to people with physical disabilities.
If it is possible, I would like to hear your takes on this. In your reply, it would be helpful if you answered the following questions:
How will disabled people play Minecraft?
Will this increase or decrease Minecraft sales?
Will the controller or other device be fit to play Minecraft with?
