I’ve now started the desert village 3 times. Each time I’ve carefully walked and protected my town, lit it up and have had at least 3 golems.
3 times now my village has been wiped out by zombie sieges.
In my latest save I just went went on a 1 hour mining trip. Low and behold I come back up and I have gone from 20/30 villagers to 4. And 3 golems to 1.
If 1.14 are you sure it's zombies and not pillagers?
At least up to 1.13 zombie sieges are only supposed to happen if a player is in (or very close to) the village, though I suppose mining under it might count.
If it is a zombie siege you could try making the village smaller so they spawn outside the wall.
(I don't know if that would work for pillager raids as well.)
Using walls and gates to divide the village into sections could also be a good idea.
Making sure the doors are flush with the outside of the houses and removing the stairs so that there is a full blocks jump from the ground to the door is supposed to be a good idea, apparently zombies can't break down the doors if they have to jump.
Replacing the floors of the houses with bottom slabs and digging a cellar under them would keep zombies from spawning inside the houses, you could do the same to the ground and paths between the houses to cut down on the number of zombies that can spawn inside the village.
(Might work for pillagers as well.)
Just putting slabs on the ground and floors won't help if it is a zombie siege, siege zombies can spawn inside transparent blocks as long as there are solid blocks under them, lighting doesn't help either.

For the first time ever I have a village large enough to be a target, and if it got wiped out I would be devastated. So in future it will be “Early to bed and early to rise, keeps zombies away and saves villagers’ lives!”
I've barely had only a few zombie sieges and most of them weren't much of a threat. I left the village overnight and it was mostly quiet. sometimes few zombies tries to walk into houses but they didn't try to open the doors. They were mostly targeting golems first when there's one nearby. note I was playing locked on hard difficulty.
TBH I'm now more afraid to leave my village in daytime than nighttime because of constant pillager attacks everytime I leave the center of the village. Most of them somehow spawned in the middle of the town and killed most villagers 4 times.
Kiting the Pillager patrol captain out of the town is hard, as it mostly end up getting stuck somewhere and aggros my tamed wolves by hitting me, which kills them quickly. Whenever they do, I need to run away from the center of the village as fast as I can before my wolves kill the pillager captain and ends up leaving me with a Bad Omen effect slapped onto my HUD, and drink my milk bucket to get rid of the effect so that I do not trigger a raid.
Now I can't leave the center of the village in daytime until I have enough Iron golems spawned around the village for protection.

Im struggling to be fair. I’ve now managed to repopulate my village, but now no golems are spawning! I just have 1.
Also my farmers dont don’t seem to be feeding people?
what is considered ‘away from the village’ far enough so that things don’t happen there?

naturaly spawned villages are so spread out that its pretty common for a seige to start near a house "inside" the village. and lighting dosnt stop the seiges. really your gonna have to build more centralized housing, destroy the out side housing and then wall em off... pretty lame but thats how things are right now.
edit, and farmers need like half a stack or so before they start distributing food.

thats the million dollar question ive been trying to figure out. so heres what i know. a player made village can have 1 golem for every 10 villagers. natural villages start with 1 bonus golem that dosnt count twards its cap but it dosnt regenerate if destroyed. its best if allll your villagers have a profession and are able to make it to their claimed profession block every day. they also all need a bed that they can access each night.
once you have that covered, place a bell in the center of the town to create a meeting place. make sure the bell is either 1 or two blocks off the ground, it seems villagers need to be able to "use" the bell when they feel like flocking over to the meeting place.
if alllllll taht is met, then a village of ten will create a golem in about two or three days. a village of twenty will create two golems in about one day. so the more villagers, the better chance they speak to the "golem gossip". i would aim for about 14 if you just want one golem or 24 if you want two and so on. villages get really buggy when you start getting into pops of 40+. at least on mobile. theres currently no way to track gossip, and gossip supposedly conflicts so if your making an iron farm, dont trade with that village, dont hit them and dont cure them if possible, cuz those are all supposed areas of gossip.
as for checking actual villager inventory, i dont think u can.
edit, i always place my bell on the ground. not "off" the ground. sorry.

rofl... there is... i just posted the mechanics above... the wiki is woefully out of date but there is small pockets of info concerning the new/V2 villagers.
edit: added some pics of bell placement i know to work and encourage gossip. note that villagers need enough room to be able to leave the meeting place. duno why. but layouts smaller than this dont seem to work.
