So, my understanding was the experimental gameplay was you playing the latest snapshot, or beta, of a future update, and that after the future update released, publicly, your version would revert back to that updated version. Apparently, that's not the case. Why? When you select experimental gameplay, are you locked into playing beta crap forever? I did it once to mess around with turtles, before they released, and now you can't unselect it, even after the latest patches have come out.

Once you're in beta you stay in beta till you opt out of it. Do the reverse on how opt in to beta in the first place.
You can't. The experimental gameplay is greyed out.
What do you mean with you can't? Of course you can opt out of beta.
