I have spent about 30 minutes searching several areas in Video Settings (How to Play within Minecraft; gamepedia.minecraft, and digminecraft) to find out what exactly are the following:
Hide hand means you won't see the character's hand in 1st person perspective.
Hide paper doll removes the little version of your character that shows up in the upper corner of the screen when engaged in certain activities (flying, crouching, etc).
This was a while ago so you've probably already figured it out, but however the screen animations setting is for the UI appearing, the setting being on, gives the UI a smoother appearance rather than it appearing immediately with no animations. 5 years later I hope this helps! lol
