Very different. I feel like bedrock originally started as a list of all the things they wanted to change to make java harder, mainly with game mechanics that are taken advantage of... Then they realized the java community would riot, so they decided to make a 2nd game with the ability to link between systems.
I’d be ‘battling the darkness’, exploring and lighting up caves, and remember the exillaration as I go deepe, the tighter the mob groups become and encounters start happening in increasing intervals. Creepers, skeletons now at every corner and often in trios and it becomes a challenge with each new room. This unexpected escallation of difficulty in my fight against the darkness was actually quite fun.
Bedrock edition —“its gone now” Half the time, when lighting up caves, I inadvertantly force enough mobs to spawn in some unattached room somewhere and then nothing. Rest of cave lighting might as well be on peaceful and I’d scratching my head to figure out where all the mobs went.
I say, “ who cares!” if people can build crazy farms that empower towers made of glowstone and sea lanterns, the endless bone that gives birth to every wood layout or simply the exp needed to keep tools in good repair to dig out the materials needed for diamond and gold flooring. “Its gone now” takes me ages to make repairs, gather materials... building has become a slow endeaver for each and every structure as much as 6 times as long because of all the delays in the process.
I still find lots of mobs and don't appear to be having this issue, in fact none of the people I play with have encountered this issue either so not sure what to say really
On ground level, I see a fair amount of mobs, nothing like what I'll see in java videos though, like watching mumbo jumbo in hermitcraft. Caves, unless it's a spawner, I rarely see mobs around.
Mstar is right from a game mechanics perspective. The game will only allow a density of 7 mobs, in a 4 chunk radius, these mobs can spawn in adjacent caves you haven't explored in a certain radius depending on your Y level, and don't typically respawn. So in a complex cave system it's not hard to walk around a lot and not see more than a mob here and there.

I like Microsoft Edition because it's easier to play with friends on a private map, and it doesn't cause my CPU to spontaneously combust.
I like Java Edition because of free mods, player made maps, public servers, lots of items that haven't made the transition, it doesn't try to sell me things, the GUI is less sterile and restricted, I'm more used to it's shortcuts and submenus, etc etc

If anyone is thinking about which to buy, get Java. They're the same price, except Java is faster, has better Redstone, and can play on any computer without needing to buy the game a second time like in Bedrock. One of the dumbest arguments in favor of Bedrock is that it's more accessible, which it is unless you have an IQ of 10 or above and know how to download Optifine. With Optifine, I can get 100 FPS with my less than $300 laptop. Almost everybody has a laptop that runs mac or windows, so there's no problem with accessibility. Get Java.

I play both--and have servers with both---I enjoy the java minecraft a whole lot more but PE edition has its own unique game play, more simple.
