For those of you who own an Xbox One could you tell me if Player to Player hosting is still a thing? This is personally something I cannot check and would like to better understand from you, the community.
From what I currently understand:
Players can join or host realms.
Players can also play the new update in single player.
Is there still friend to friend games and
1. Is it with the new Minecraft version
or
2. Plays old maps (or new?) the way it was prior to the new update.
Unless it changed between beta and 1.2, locally-hosted multiplayer games (not a Realm) still work like they did in Minecraft: Xbox One Edition. My usual MC:X1E co-op friend and I both got the beta and were able to play in one of my worlds. We haven't yet hooked up in the 1.2 release, but I presume they didn't remove that feature?

This is why I am asking. I wanted to understand if those that have updated play the limited map of the previous Minecraft: Xbox One edition, or if they can play the new update on a limited/unlimited map/world.
Well we were playing on a world created in the beta, so I presume it was infinite. We didn't explore far enough to prove it, of course. As far as I'm aware all Bedrock/Better Together maps are the same, including converted maps from MC:X1E. They get "upgraded" to infinite. I don't think hosting the world in a multiplayer game changes that any.
