You need to look inside the .jar file from your minecraft install location:
"%appdata%/.minecraft/versions/###/###.jar" where ### is the minecraft version you're using.
Open that file with win-rar or any archiving software that supports .jar archives.
You'll find the sheep assets in "assets/minecraft/textures/entity/sheep/"

Actually, in MCPE, the wooless and the the wool...ful? Is one file. If you can't see it, the skin of the sheep is transparent whereas the wool is not. This is made so the nontransparent gets the "dye change" where the other parts of the skin does not change. It works the same way on leather armor in MCPE. A good way to see where the transparency is located is to use the pick color key to where the you thin it is using pint.net. ASk me anything you don't understand about the sheep.
