So I know the number of blocks in a stack is the damage value, but what is the hex for infinite blocks (or at least 64)? Because I'm not sure how to change that value :/
Damage is a different kind of same block, as in there are 4 different saplings in pc, so if the hex was 13 then sapling one would be 1301 sapling 2 would be 1302 similar to that, I just don't know where they put the damage, to edit the amount in a stack you just hex the "count" part in the level.dat, basically just change it to a high number and you'll have a full stack

at the top right this is my dirt I believe, and it has "id" which is what block it is, and a little after I have "count@" that's where I can edit the amount I have. Not sure why you don't have it though

Why don't you use that pocket editor from the play store? Or jailbreak and use iMCPEdit if on ios

Used the hex editor in Myfile, go to the id area in the hex editor. And put the hex value for what block I want into it.
