So im somewhat new on PC and minecraft. I'm playing on survival and I've built a house and wanted to turn it into like a compound, but i dont like how just putting up cobblestone or other types of walls look without making it look like a castle. What do yall got?
Edit: I also have a little farm and a mineshaft ive started but I want the walls big enough to fit more things into it like a watch tower or something. I also dont have any mods and I have no idea how to do them.
Some automatic farming (e.g. classical 1-block cow farm or classical 1-block chicken farm) for automatically renewed food it's a good start. Also a cow farm brings you closer to crafting an enchanting table with supporting bookshelves.

If you're new to MineCraft, I would suggest not rushing into things. The unmodded game has loads of recipes and things to explore, so for your first world it might be a good idea just to get used to basic MineCraft before you overload yourself with mods and lots of new recipes. Of course, some of the things you can do with modded MineCraft look amazing, so you'll want to install mods eventually. But if you start by trying to do everything at once, you might end up feeling a bit overwhelmed. MineCraft is like anything else in life - if you learn how to do it slowly and steadily, and if you give yourself a chance to get familiar with things at a reasonable pace, then you'll enjoy it more. Try to be patient. :-)
You mention that you don't like cobblestone walls. Did you know that you can "cook" cobblestone into smooth stone blocks using your furnace? Also, if you continue with your mining, you will start to find blocks of granite (brown), andesite (grey) and diorite (white), which make better-looking building materials than cobblestone. Keep an eye on your recipe book, which will show you new things as they become available to you.
Also, you may find that it's a bit boring at the start of the game to have to cut down trees all the time to get enough fuel. First, split your logs down into planks and use those as fuel. But you can also "cook" logs into charcoal, which is a more efficient fuel. If you set up a furnace as a charcoal-maker, you can multiply your fuel greatly, so you won't need to keep walking around so much to find trees.
I hope those tips help. And good luck exploring your new world!

For inspirational purpose i suggest watching following youtubers:
-Grian
https://www.youtube.com/user/Xelqua
-Forge Labs
https://www.youtube.com/channel/UCiSVf-UpLC9rRjAT1qRTW0g
Grian fokuses on teaching building in general. No block by block tutorials, helpful tips instead!
Take a look at his building school playlist.
Forge Labs has some very interesting modded videos like survival on jurassic island or his "mustard-virus zombie apocalypse".
I enjoy watching his content, it's very interesting over all and makes me want to create & play crazy minecraft modpacks.
Since i don't know what you like i can only suggest 2 clientside mods, wich work well for vanilla & modded minecraft.
-JEI (Just enough Items)
It's like an ingame google searchbar for recipes. Very helpful if you are new to minecraft or if you have a new mod installed
-Hwyla
Gives you details about what you are looking at. Blocks, mobs, flowers ect. It also shows you from what mod they come if they aren't vanilla.
I think they are both available for forge and fabric. No matter what i play, i always have these 2 mods installed.
My projects:
-are abandoned for now. I might pick 'em up in the future.
For now i'm working on a private modpack that suit's my own playstyle.
I am gonna stay in modded 1.12.2 untill my potato dies. No mercy! :Q
Forge labs is the whole reason I got minecraft

Getting farms and integrating villagers into your local area by building a small village are some cool ideas you could do
