They still won't generate in any amount that would be worth trading though. I'd silk touch them for decoration but that's about it, the majority of emeralds would usually come from villager trades which is pretty ironic considering the game is meant to be about mining.
I'm not against being able to farm infinite amounts of something from a trade but there should still be incentives to actually mine for it.

I would almost support the replacement of emerald ore with a different novelty ore such as the long-proposed ruby ore (or, rather, a variant of it that isn't red) for this reason alone. Emeralds are currency, which negates their usefulness as a mined ore when it's not likely anyone would be mining for emeralds. Having said that, you could say the same about gold farms. Why bother mining for gold in a mesa biome if you can farm it indefinitely? It's really more of a bonus feature than anything else, IMO.
Granted, 1.17 is giving us new reasons to visit mountain biomes, so it's not like there are any real drawbacks from the current system.

Since it's a sand box game we really need more world options in this game IMO
custom worlds used to exist in Java edition although I'm not sure they do now in the current version,
but back when custom worlds were implemented you could practically modify the scarcity or abundance of ores or other materials in the game.
despite all this none of this existed in bedrock edition, we don't even have buffet worlds yet as far as I'm aware in bedrock edition so we cannot have a buffet extreme hills world to increase the abundance of emerald ore underground.
I'm not saying gemstones should be as common as stone, that would obviously make no sense, not just because it is game breaking but because it is literally an absurd thing to do, although real gemstones aren't all as rare as some people claim they are.
However there is such a thing as too grindy also, and I don't see why people should be spending the vast majority of their time in the mines just to keep good gear on them considering there's other things they could be doing with their time like going to the End to find more Shulker boxes, or going into the Nether to find more diamond horse armour in Nether fortresses etc.
