1: I think the bell is a collection point for villagers to spread gossip and decide how much to charge/pay you for trades. And for sounding the alarm if there's a raid, it makes the villagers run around in a panic and shut themselves in their houses.
2: Did you fence in and light up the village? Otherwise he was probably killed by a mob.

(Beds are only counted if a villager has been close recently, and there are rules for when a newly discovered bed becomes part of an existing village and when it becomes a new village.)
4: Yes, it's hard to get them to leave their village but they're happy enough anywhere.
The easiest way is probably to push them into a minecart and run that back to your base.
If your base is far away it's probably easier to cure zombie villagers, they will follow you automatically but will burn in the sun.
(Lure them back to base first, then cure them.)
5: If you just place a job site block a jobless villager may chose it, if they have a job you need to destroy that job site block and you can't have traded with them. (That locks their profession and trades.)

I have been having a lot of fun learning about villages by observing their behaviour and tinkering with village structures.
I have a few questions:
1. What is the purpose of the village bell? What does ringing it do, and what happens if you destroy it?
2. I had a master level Cartographer in my village, but he randomly disappeared. Why?
3. How do I know the perimeter of a village? Is it just where the road ends? Can it be extended?
4. Can I bring a villager back to my base?
5. If I destroy a profession block, e.g. a cartography table, can the cartographer re-assign his profession? Do I just place a different block?
