Recently, I haven't been able to stay interested in a survival world for more than a few days, but now that I have two weeks off, I decided to try something new. Basically, I'm going to set up a survival world, get my tools in order, etc and then it's going to be up to you to decide what I do next. It can be anything from getting a stack of cobblestone to getting a full set of netherite armor, but whatever it is, I'll do it. I've also posted this on Reddit, so as ideas come in, I'll make a list of what I'm working on, what I've completed, and all the ideas I've yet to start. You control my progress, basically. I'd invite some of you guys to join, but the server I had set up a while ago just stopped working, so for now, I'm on my own.
Let's see how this goes! I'll also try to provide pictures when I can, although I'll probably forget to do that.
Ideas/Challenges so far:
Try to travel to a Mushroom island. Bonus if you can get some mushrooms and bring them back to your base. (r/minecraft)
Find an abandoned village. Then try to rebuild it so you have a new village. (r/minecraft)
Explore some ocean monuments. (r/minecraft)
Clear an ocean monument of water blocks and empty it (only keeping the outer walls) using sand and sponges. (r/minecraft)
I probably won't be able to do that completely, since I already got some ideas that do require a base, but I'll mix it by not staying in one place for more than a few nights. Thanks for the idea!
The challenges that you have got so far are quite tough, but you probably don't mind tough challenges, so here another one; Get an Elytra from an End Ship!
Build an undeground village, either more orderly bunker one with walls made of processed blocks or dwarfy one with more natural rocks and some irregularity (stone slabs might be useful)
Preferably expand igloo basement, with some mundane-looking 5x5/7x7 combat pillbox or mini-castle on the surface.
Alternatively you might go in the opposite way, and instead of rebuilding a village, creating your own, with a lot of modern designs and things like interior farms and clustered working stations in big factory halls.

Raid a piglin bastion without using direct weapons (specifications below)
-Left clicking mobs on purpose is not allowed
-Instead use different options, like sending piglin brutes to the overworld, or using a lava bucket
-All Piglin Brutes must be eliminated and if the bastion has a treasure room, it must be raided.
-You can wear gold, but avoid it for an extra challenge.
Maybe conquer it normally, but then repair the bastion and convert it into an operational base?

Interconnect multiple important locations (villages, blaze rod grinders, dungeon grinders, pillager outposts) with a nether iceway or railway.

Try the nomad style (eiche_brutal)

No basecamping, no ironfarm ect. You can get all enchantment books you need from fishing or villagers, if you spot a village.
You can tame dogs and try to get more storage by using mules or lamas and the e-chest. (Silktouch)
Pick a direction and just travel of into the millions of blocks away from spawn.
To top it off play on hard / hardcore.
Edit:
You are not allowed to plant seeds or bread animals. You only stop to smelt items, cook food or fish.
Your goal is to travel as far as possible.
