So after much research, I cannot find out what is the basic 'valid house' check I'm failing on my underground village.
I have a cave hollowed out about 60x30x25 blocks or so (irregularly shaped).
The houses are carved into the walls, with accessible beds and doors, and none are further than 32 blocks from the bell. However I've brought down a villager from my overground (about 120 blocks away) but it is completely unable of finding beds or job site blocks. It wanders about, stands in front of a bed, adn walks away without displaying either angry particles or any other sort. It keeps doing this in all the spaces in the cave.
I have tried making a hole to expose a hole in the top layer of the houses to sunlight, but that isn't helping either (in case it had to perform some sort of 'roof' check over the bed).
Though that's quite amusing, as throughout the course of its day, it comes across many job blocks, but doesn't claim any?
It used to be a farmer, but I didn't break his original job site block, just moved it far away from the block.
Edit: I've been trying to claim different beds throughout the cave and it turns it can claim all beds, so that's no longer an issue - now, I wonder what's happening with the job sites? Some are indoors, some are right in the open yet it will claim none.
Edit 2: Sorted. They still had a bound to their original job site block despite it being far away and effectively in another village. All good now!
Hmm, that explains why the second farmer can't claim any other job sites - I have indeed traded with him and levelled him. Let's see what the offspring do.

Try placing some beds and workstations out in the middle somewhere.
I made a village in an ocean monument with no problems, though I just put all the beds and workstations in one big room.

Nitwits don't have jobs.
If he's unemployed he must have forgotten about the old job block.
But you could try breaking the old one to be certain, unless some other villager has claimed it.
Are any of the job blocks you have provided composters?
If you have ever traded with him he would be unable to switch to any other profession.
