Do leveled villagers forget profession it no work table is nearby? I'm doing a trading hall with small alcoves and put the corresponding work table in front of the villager but newly bred villagers is constantly using these to pick a profession, so I thought not doing that anymore and just put down a bookshelf or something but I'm afraid they will then forget their profession.
A job site block can be claimed only if it is unclaimed and within a village boundary with at least 1 bed. Removal of a claimed job site block causes the owner to switch to another profession or become unemployed, provided that the villager has no prior trades with the player. If the villager has prior trades, it keeps its profession and claims a new job site block that matches its profession if one is available. So, once a player trades with a villager, the villager keeps its profession forever.
They do however need to have access to their own job site block in order to restock their trades, so you'll probably want to go back to giving them job site blocks.
I don't have much personal experience with villager trading in recent versions but I gather the solution is to separate the trading hall and breeder by enough (100 blocks or so?) that they don't interfere and get the new villagers to pick a profession and trade to lock it in at the breeder (or perhaps at a "trade school" in between) then cart them off to the trading hall and give them their own job site block.
This has a few quirks if the village covers a fairly large area. Observed from my own game. After waking up, villagers spend some time wandering about. And I noticed that, if the "owner" of a workstation is far enough at start of work day, this station can be claimed by an unemployed. I have, on many occasions, found workstations near village center manned by fresh novices, while original owner would hang out in some far corner. This is not a very good situation since a levelled villager who does not get to use a workstation, is not going to refresh his trades.
What I do in this situation, it grab the usurping novice with a boat, pop a new workstation of whatever profession I am in need of not far off, destroy the existing station. Normally, at this point, the novice will switch profession. I row him out to his new station, remove the boat, then replace the old station. At this point, the old owner will usually make his way over to his workplace.
