So I have a librarian in my survival world selling mending books, and one day I traded one with him and I saw there was a red X on the trade. I thought, 'It's fine, he'll restock soon.' And I left it running for about 10 mins, and when I looked at it, he still hadn't restocked yet. So I left it running a little longer but had no luck. I really don't want to try and replace him because it took so long to get the mending! Please help!

Sometimes you have to sleep through the night to fix that problem.

Had this same thing happen with a librarian but it was even earlier on his first trade (Papar -> Emerald). Never did get him to update although the farmers in the same village updated just fine. I tried adding more beds and houses and dropping lecterns all over the place and never got him to update. Finally gave up on him and made a trading hall with villagers I bred for it.
As far as I know: A villager has to work at his jobsite in order to restock. That is why it is sometimes helpful to sleep through the night. It just makes the time pass more quickly so that the villager has the opportunity to visit his jobsite during working hours the next day. Possible problems: the villager can no longer find his way to his workstation, the workstation has been removed or another villager has claimed the same workstation. The latter possibility shouldn’t happen, but maybe a glitch can cause it. I would try breaking the villager’s lectern and replacing it when he is nearby.
