You might try breaking all the beds, and maybe any bells for good measure, that should erase the village and any lack of popularity.
Then when you replace the beds it should count as a new village and you'd have a clean slate. At least that's the way it worked with the doors in the old villages.
I have no idea how long that takes, somewhere between instantly and a Minecraft day I expect.
You might want to fence in the village to keep the villagers from wandering off while there isn't a village there.
Somewhat related question. Does your popularity in the village decline if you kill nitwits? I have a bucket load of them in the village taking up space. Secondly, how do you determine / see your popularity in bedrock / PC version?
Nitwits are valid villagers and if you kill them your popularity will drop. If you don't like them taking up space, you can lock them in a house somewhere. If you have a cruel streak you can fence them out of your village and let mobs kill them. Or create death traps.
Since they are good breeders (heck they have nothing else to do, being jobless :-) ) you can use them to populate depopulated villages or new villages you create yourself.
Thanks for the info. I play on a PC using win 10. How can I determine what my popularity level is? I have seen the result of successfully defending a village from raiders but that only lasted a couple "days". Is there a way to see your popularity in the game / village?
There's no way to see what your popularity level is directly in any version of the game, you just have to walk in and wait to see if a golem smacks you or trade with a villager to see what his prices are like.
I have not noticed any real change in "prices" other than when I defeat raiders going after the village. That got me a discount. Otherwise I bring multiple villagers to maxed out trading levels and the "prices" for trading remain the same. I also found that the traveling traders really don't have anything worthwhile to trade. I fail to see exactly what their benefit is.
Wandering traders are the only way to get some things in certain specialized cases, like Skyblock, Survival Islands, single biome worlds.
In a standard world they don't do much for you though they can get you things like cactus, jungle trees, etc without having to go off and find a desert, jungle, etc.

Are you playing the Java edition? If so, this is very odd. My villagers lower their prices all the time when I trade with them, however I never bothered to pay attention to how many trades I have to make or whether I have to trade with multiple villagers to make this happen. Not paying attention to what the trades are can be costly, however. Once I was merrily trading with a lot of villagers who had all lowered their prices until I noticed that one villager was charging me much more for a particular trade. Apparently the law of supply and demand also plays a role in pricing, so the price can go up for an article you trade too much even if you are popular in the village.

easy way out is to KILL THEMMM KILLL THEMM ALLLLLL (from a safe ledge on a roof top or something)
