One of the problems of AFK fishing is that you accumulate a lot of enchanted junk. I say junk as being books, rods, and bows which have enchantments you would obviously never want to use or very low level ones that aren't worth building up. Now comes the grindstone....
I use an infinity bow, and never use mending bows so have no use for them except as fuel. By disenchanting 6 of them on the grindstone they are still fuel, but I recovered 3 levels of experience ( from 17 to 20). This is much more than the XP obtained from the AFK fishing to get them. I figure If I empty all my chests of trash stuff I can do better than an average MOB farm.
My main world is 1.12.2, but my second world is 1.14.4 (hardcore). I found I really liked the grindstone as well. It's just about the only thing I miss going from 1.14 to 1.12.
Yeah, I love the grindstone. Fished for 7 hours last Saturday while I was shopping and watching a football game. Came back and had 4 double chest full of stuff. Threw away all the fish and saddles (multiple chests full of those already) and unenchanted all the bows, poles and books (except for the 2 mending books I got) and got almost as much XP as I did fishing in the first place. Careful when unenchanting bows though... I was just clicking away unenchanting stuff and almost threw my good bow in there...lol. Now I just throw it in a chest before I start so I don't grab it by accident.

I have a big problem doing this, for some reason, my fishing rod always disappears when i come back, and its enchanted with mending, unbreaking three, luck of the sea, and lure. i left for one hour, only to comeback and see that my rod was missing, the mouse was pointed to the same spot, i had nothing else enchanted with mending in my inventory, well, not even anything was enchanted except my iron boots, with frostwalker 2 and feather falling. i really need an answer to why this happened

If you are wearing out a 'mending' rod in AFK fishing, it generally means the rod is casting to a non fishable spot. This can happen if the mouse is shaken or moved and target shifts. Can also happen in glitched conditions in the game. I've lost a couple but looking after I return, My target is not correct any more.

Where I get the most use out of grindstones is enchanting. Table not have a good enchant? Put a level 1 spell on a golden breastplate and then turn it on the grindstone to get some of that XP returned. I also have a gold farm, where zombie pigmen drop tons of enchanted gear.
