Could be anything as long as it has an actual purpose. So no projects that are merely aesthetically or creatively pleasing, but something that has an actual role.
I'm in the process of collecting all of the hostile mobs in the game and designing a museum type building for them. So far i've collected a shulker from the end and some of the overworld mobs.
or maybe just create a "wonder base" which is entirely self sufficient and automated and you wouldnt need to leave the base at all for whatever reason?

what about building mob/tree/crop farms etc?
very large scale ones who take days to build
