Visited 8 villages in my newly created single-player survival world and was really shocked by the lack of any working professionals in them. I found 1 librarian, i cartographer, i toolsmith, 1 leatherworker, 3 farmers and over 2 dozen nitwits.
Just to check that they had not been killed off in raids or such I recreated the world in creative mode and flew around checking. Found 1 more librarian I had missed, and actual count of the nitwits was 32. Only 1 village appeared to have more than 1 worker.
Is this typical? I seem to recall that there were a lot more acftual workers in earlier versions or is this just a fluke?

In my experience this is not unusual since workstations were introduced. Although I haven’t yet discovered a village that has zero workstations, I have discovered villages where there were only one or two workstations and where all the villagers were jobless because they hadn’t gone near the naturally spawned workstations yet.
According to your post you found only 8 naturally occurring professionals (not unusual) but 32 Nitwits. That many Nitwits would indeed be unusual. Are you sure you are not confusing normal jobless villagers with true Nitwits who have green arms and who are unable to take on a profession?
The first thing to do in a new village is to make sure it has farmland and composters to support the farming profession that will keep the villagers fed and enable them to breed. This often entails planting crops yourself and feeding the villagers until the village population has become stable.
Also, Villagers won't generate until your view distance causes their chunk to generate. Then it takes a day or more for them to discover workstations and choose a profession.
