Although I've been playing Minecraft for years I haven't been much into interacting with villagers. I've just updated to 1.14.4 and decided I needed to add villager/trading to my play experience. A few questions or observations:
In my new world, so-far, I have visited 15 villages. Most have 0 or-at-most, 1 working villager and a LOT of dimwits. 1 village had 3 profesions and 2 had 2 but several workstations were being unused in many villages without workers.
The dimwits seem to be enough to use most of the available beds. Can I kill off a few to make room for productive workers?
I'll probably have to kill the Golem as well so will it respawn?
Can I convert some of the houses into workstations by adding appropriate apparati, or will I need to build new houses?
How can I increase working population it there is none there at first?
Are you sure they are actual nitwits and not just not claiming a workstation for some reason?
The nitwits have green jackets, some of the others have green hoods but not jackets.
Was this world created in 1.14 or updated from 1.13?
I think there may have been some problems with updated villagers.
Unless all those nonworking villagers have green jackets I'd try placing down new workstations out in the open easily accessible on (or in) the ground.
If they are nitwits then that sounds like very bad luck.
If you start killing villagers you should use lava or something.
A bad reputation, that will get you attacked by golems, is stored for the village as a whole, any newly spawned golems can still attack you even if they weren't around when you behaved badly.
No, they are true nitwits. All have the green and simply grunt when clicked.
many of the villages have workstations in houses around but I've only found one village with librarian, 2 with cartographer (1 of these had wanished when I returned) and a few others. Most workers are farmers.
Guess I'll have to try to get the workers to breed in those villages I can find at least 2 of them in.
Killing them will negatively affect your reputation. Just start adding more beds, and more job site blocks. Make sure they have plenty of food. They should start breeding more villagers on their own.The details on breeding are here, in the wiki. It's a much simpler process than it used to be.

I'm pretty sure the nitwits will breed, I believe that all it takes is beds and food.
(And nitwittery shouldn't be heritable, nitwits are no more likely to have nitwit babies than productive workers.)
