My farm is set for a 20 block drop and most mobs only take 1 hit to kill. A lot of the spiders die so the 18 is probably right for them but all the others survive to be killed by me.
Actually, if you use lava to damage the zombies, it is possible to get them down to a one-punch kill. I have build zombie grinders that don't require stone swords using this technique.
Can you show, or describe to me how your setup works? I've only been able to get them to 2-hits, or full-on dead, even using lava.
Alright, I guess I should revise that to "you can't bring a zombie to 1-hit kill using fall damage alone."
(By the way, that particular design is slightly broken since 1.5. The zombie still ends up a 1-hit kill, but the water doesn't get sucked back up into the dispenser, so it's no good for a grinder without modifications.)

Oh ok. I was interested in it more as a proof-of-concept, than anything, really. And it did just fine for demonstrating that. Is it because the fire damage is reduced by their armor, but fall damage is not, meaning the fire can bring them down to the less-than-half-a-heart required for the 1-hit kill?

I think it's because the lava "damages" the zombie's innate armor at the same time it reduces their health to half a heart. I'm not 100% sure about the mechanics though.
I'm on 1.81. Just last night I built a skeleton XP grinder. Turned out that 23 blocks would kill them every time (unless they had spawned some armor), but 22 blocks made them two hit kills. I would rather have the XP so I stuck with 22 blocks. But it's easy enough to experiment on your own.

Why 23 when 2X+3= deats to players zombies skeletons creepers it should be 20 to 22 for instant kill with fists

Personally, I wouldn't really worry about this; after all, it is completely practical to use even a diamond sword to finish off mobs; with Unbreaking III you'll get over 6,000 kills, 30,000 XP; in fact, even during regular use (i.e. killing mobs normally) with a more highly enchanted sword I get over 6 times the XP I need for repairing; a Sharpness V, Knockback II, Unbreaking III diamond sword costs 35 levels for a 50% repair, using the pre-1.8 repairing system; each repair gives back 3,120 uses, 1,560 mob kills, and returns 7,800 XP, on average - not considering that mobs with equipment, even skeleton's bows, drop an additional 1-3 XP per piece, since 1.6 (noting this last because this thread was started in 2012).
Note that 1.8 makes it much cheaper to enchant as well as repair, even with a limited number of repairs, making XP farms much less necessary (to initailly enchant I just mine Nether quartz, another thing that wasn't possible back when this thread was made; this is nonrenewable but I only need to do it one time).
Basically if he wanted the fall to kill them for just drops to be collected the piston would be retracted. If he wanted to kill them for exp the piston would be out making it a 23 drop instead.
