Your time would be better spent harvesting all the melons that have grown so new ones can grow there rather than waiting for every last one to grow.
If it's always the same ones that don't grow then that may be worth investigating but why didn't you take a screenshot showing the ungrown ones close up?
There certainly seems to be enough light everywhere but we can't see much else.
It could be a lighting glitch I suppose, you could stand on the block where a melon has failed to grow and use <F3> to check the light levels.

I think plants grow when you had at least a light level of 7.
but I just found out myself that you really have to wait for a very long time just to get a melon xD.

It's not a big deal anymore, I conclude that they generated for a long time, and some generated for a short time, even a second.
Barring a situation where you can pinpoint specific blocks that are always never growing melons, what you are experiencing is probably the normal affects of the random block tick (the thing that causes something like a melon to grow). When you have a lot of blocks that can receive a block tick, you will see a lot of quick activity...however, if that same area is already grown in then it can take forever for the gaps to fill in. This is because the block ticks are still landing on the blocks that already have melons on them and therefore get "wasted".

I waited for 1 hour for a melon to pop up.
I even
-bonemeal the melon sprouts till they turn into a caramel color.
-Calculated the whole thing
-The following order of blocks is
Water
Farmland
grass (where the melons pop up)
And I m pretty sure I have enough light source to help the melons grow faster.
the others just don't .. pop up.

Plant growth is 100% random, it technically could never grow for 1000 years
