Almost every time I start a world on minecraft I get bored and rage quit after 15 minutes.
It just befuddles me on how Syndacate, Etho, (and other people with long running Minecraft series) don't get bored. If anyone has any ideas they would be greatly appreciated.

^ that revived minecraft for me. but, you MAY or may not want to add Equivalent Exchange. Eqvuialent exchange will make things easier, but the world will get boring SO much faster.. i suggest just not using it tbh. Even as it is right now im kinda bored with the mods, and boring with singleplayer in general. i just play small mp worlds with friends

I'd hate to say this, but minecraft may not be the game for you. I mean, everyone gets bored of minecraft after a while, and they install mods, set goals, or create a whole new world to begin anew, but this usually happens after a couple of days.
Regardless, I'd still recommend trying out the achievements, they give a rough guide of things to do in the game and the basic order to do them in. Maybe you're just setting your goals too high by watching all those videos, start small and work your way up to larger projects.

I used to play minecraft for 4+ hours in one sitting but all of a sudden it got boring. Hopefully 1.3 will bring back the fun.
Try out some new mods and texture packs (I suggest Mo' Creatures and ExtrabiomesXL)
Maybe think of a theme for each world you build or set a goal. Like, on one world your theme could be underwater and your goal would be to build a whole underwater city, or another theme could be desert and you could build loads of pyramids etc.
You could try recreating real life buildings and structures like the Eiffel tower, the London eye, anything you can think of.
If you don't find any of them good enough, I really suggest you join a server; minecraft is really fun when you play with other people, whether it's because you want more of a challenge and want an actual reason to hide your base/ stuff, want to test out your fighting skills against other players or just want to show them your stuff.
...Another really fun thing to do (Although it is really. damn. mean) is place TNT blocks around a village, so that they're covering every surface, and then light one, setting them off like dominoes. ...I'm so mean XD.
There are so many things that keep coming into my mind that I could suggest o.o Explore caves, get to level 50 then enchant something, find 64 diamonds, make a whole basement out of gold blocks, build a mob grinder, experiment with pistons/ redstone and figure out traps.
Another good thing would be to try out a map! There are so many out there whether it's adventure, puzzle or horror. I suggest "Trial of the minemasons (Puzzle/ adventure) and "Levi's Nightmare" (Horror) I haven't played either of them but I've watched playthroughs and they look rather fun!
Also, I'm guessing you watch LPs so maybe when you're watching someone else build something or admiring someone else's creation, set a goal for yourself to build a much better version of their best creation.
You could make an animal farm with at least ten of every coloured sheep; that would keep you occupied for a while. OR you could find a mushroom biome! Those things are really rare! Then you can post it on the forum and be like "ASDGH!!1!!one!!one1! I found a mushroom biome guys!"
Tame some wolves and ocelots. Enter "Top 5 minecraft creations" on youtube. Build a giant statue of your character. Build a giant statue of your characters HOUSE...wait, what? ...Explore a mineshaft and find a melon, try and collect every single record that you can obtain legit, make a brewing stand and make potions, defeat the endergragon if you haven't already, try hardcore, try FLATcore, build a base in the nether! Turn a section of your overworld into the nether! Kill some zombie pigmen and live to tell the tale! Collect 64 porkchops! Eat 64 porkchops!
Do ANYTHING you want! ANYTHING! None of this suit you? Make up your own goals! Can't think of any goals? Then STOP playing minecraft as it obviously isn't the game for you!
Build mechanisms, although this is not for everyone.
Design houses and villages and towns and even whole cities, although this is not for everyone.
Role play and tell a story as you go, some people go one step further and make a video of it and do edits, although this is not for everyone.
Play challenges by making up additional rules, like the nomad challenge, the underwater/ground challenge, although this is not for everyone.
Investigate the most efficient way to mine, to obtain experience, to get certain enchants, or just the fastest/easieast/most probable way/...etc. of doing certain things in Minecraft, although this is not for everyone.
Make maps and design caves and maps for others to play, although this is not for everyone.
Make mods, texture packs, skins, although this is not for everyone.
Am also on the same place as you, I've been playing Minecraft since it was in alpha 1.0.1 and I've been playing non stop since ever since 1.0.0 was released the game got less entertaining for me.

Well, I was bored with minecraft for quite a while until recently, now i've got into creative building and trying to build intricate structures in Survival. You might also want to delve into online if that interests you, they'res a bunch of great servers for RPG, PvP and basically anything.
have different playstyles. this option is much more fun and accessible with "infitools/infiblocks" mod. with the mod i usually live a big desert due to the fact that i love the feel i get when i'm in my scrappy sandstone hut with my horrible sandstone sword wondering how i will get my food or what i will do next.
Just an idea but start a new world and go to sector 0 which is the four block intersection of (0,0) (-0,0)(0,-0)(-0,-0) and build a base there. Put a nether portal in that cordinate space and from the nether build a network of rails and portals in all directions at 500 surface block intervals along with outpost stations. While you do this build a map for mounting on your wall in the real world of your rail network like train stations have for maps.
