Since you're building in a Savannah, I'd probably recommend Acacia as it complements the environment around it. However, if you're going for a build that stands out I'd recommend Dark Oak or Spruce because it contrasts very nicely with the colors in Savannah's.
In your screenshot I prefer the darker wood on the right because I like the contrast. Both look good, though.
I like the design of your storage room and am very envious. I like to do everything in the game manually except sort. In a previous world I did make a small simple automatic sorter using a tutorial, but in my current world I haven't yet. I would have no idea how to make a sorter that has two rows of chests with a path in the middle.
It is actually quite simple. Pixlriffs channel has an auto sorter video where he explains everything. Its tile able so i can make a large row of them. Then i make a hopper line going around the chests and around the back of the wall at the end of the row. Connecting the two rows together. I can provide screenshots if you like?

I think oak and in particular birch look cheap.
Any of the other 4 are preferable for most purposes.
