I have found an amazing island seed a while ago. The problem is that it has icebergs near it. I really don't like icebergs so can someone please tell me If I can get rid of them with out the water freezing back into ice?

According to the Wiki "Water source blocks in a snowy biome will eventually freeze into ice if exposed to the sky from directly above, the light level immediately adjacent to the water block on all sides is less than 13, and there is at least one horizontally adjacent non-water block."
So if you remove the icebergs and light up the shores you should be able to remove the ice without it reforming.
Packed ice and blue ice will not reform, but regular ice will.
If you don't care to light up the entire shoreline, you can perhaps look at building a boardwalk or some other manicured structure that hangs over enough of the shore that only the second or 3rd row of water blocks is exposed to the sky. You can still use lighting to show off the build, but this will give you more freedom regarding how bright to make it.
