If I make a copy of my Survival World and use the NBT editor to give myself creative mode and I find diamonds; write down the coordinates of the diamonds and go to my survival world to find the diamonds am I cheating?
If you have to ask, the answer is almost certainly yes.
On the other hand, it's your game, so who cares what we think? Unless you are playing on a server which prohibits such actions, you are free to play the game any way you like. You don't need anyone's permission to cheat.
The real question is, does it make the game more enjoyable. Games are supposed to be fun, so if cheating makes it more fun, then go for it.
If you're in single player, the only person whose opinion matters is you.
Clearly it removes/bypasses part of the challenge of the game as written, but then creative mode itself allows access to unlimited numbers of all blocks and items (including some not available in survival) and there are quite a number of users who prefer to use MC in creative mode.
In multiplayer the rules are obviously different, and any of those would likely be considered cheating by most servers.

Do what you gotta do! My world is in survival but I do not have cheats so have to switch modes from peaceful to hard. Sometimes when mining I like to go to peaceful so I can just mine and not worry what is behind me. Do what is right for you at the time. As others have said, if it is just you playing then it matters not what others think. Do only what is right for you!!
As long as you are in singleplayer, do what makes you enjoy the game more. Heck, just enter Creative mode and give yourself unlimited diamonds if you have a use for them. Switch back to survival when you feel like it. If you enjoy imposing stricter rules on your behavior, do that then. Don’t worry about what other people think and don’t let them impose their rules (which are fun to them) on you. If you discover that you want more of a challenge, then you can always impose stricter rules on yourself going forward. But don’t spoil your fun with regrets over what you did in the past.
If you want to "cheat" and know where ores are located in a single player, vanilla, world then download Minutor.exe v2.20.

I suggest you download the minutor_noinstaller.zip , extract it and place it in a subfolder of .minecraft.
Then create a shortcut for it on your desktop and set Start in: to your .minecraft path.
That's so it's easy to navigate to a world folder if your use separate Game directories for different MC releases.
This isn't necessary if all your saved worlds are in the default Saves folder.
