I'm at the midpoint of my survival game now, i have quite a lot of iron and was considering using it for blast furnaces, but I want to know if it's really worth it first, as i know i can't get the iron i use in it back. Is it that worth it, or should I just make many more normal furnaces with the abundant cobblestone i've got?
Blast furnaces and smokers work a little faster than the regular furnace. Is it worth it? I can't answer that question, all I can suggest is to build one and cook some ore in it, and see if you like it.
I guess if your mining style is to throw a stack of ore in a furnace and then go mining for 30 minutes, then come back later and collect the ingots, then it's probably not worth it to replace furnaces with blast furnaces. But if you like to put some ore in a bunch of furnaces and wait until the ingots are ready, then the blast furnaces might save you some time.
I wouldn't say that twice the smelting speed is a "little" faster - they could certainly save a lot of time if you wait for them, though I myself also just throw up a wall of furnaces in a secure area to mass smelt ores while continuing to explore nearby areas while caving, not returning until the end of a multi-hour caving session in some cases (if they are at the surface by a marker, either way I record the coordinates so I don't lose them). This also means that furnaces are much cheaper (I carry half a stack with me, which is 256 cobblestone vs an additional 160 iron and 96 smooth stone (double smelted stone), though even 160 iron is less than an hour of caving so I wouldn't call them expensive).

A blast furnace will:
double the speed with which operations occur
consume fuel at double the rate per time (which is EQUAL the rate PER OPERATION)
require more resources to produce
be unable to perform some operations (eg "Food cannot be cooked in a blast furnace.")
The first consideration is how often one smelts large quantities of ore (or performs other blast furnace compatible operations); if the frequency with which one smelts large amounts of ore is low (eg one gets most of one's iron and gold as metals from farms) the limited range of operations is probably more important than the increased speed.
If one is very limited in space for some reason, a normal furnace would be preferable as it has no excluded operations.
If one has plenty of space and resources, adding blast furnaces (either as an automated super-smelter or manually ganged – ie the wall-o-furnaces approach) in addition to one's furnaces (again, either super-smelters or ganged) might be done because the occasional utility of the greater speed was desirable (or just to play with the new whistle…).

I'm waiting for Optifine to side-grade from 1.12 to 1.14, but I don't plan to replace many furnaces in my main base with blast furnaces or smokers.
Wait time is never an issue and I both cook food and smelt ore in most of mine.
However, if I'm only planning on smelting ore at that location, then yes, I'll probably replace them.
