I try to build mega builds, such as castles, ships, villages, and even simple things such as a decent looking cave. Nothing I do makes anything look decent. I would provide screenshots, but I deleted all of my worlds because I am not satisfied with any of my builds. People always would say that my builds look good, but I always think the opposite.
No matter how optimistic I am about my builds, I end up scraping it. I want to quit Minecraft.
Well, dont. Go into creative mode and test stuff out. It will eventually turn out the way you want it too. Just keep trying, and youtubers like keralis build epic stuff. You should definatly check him out. Anyway, good luck

Thing with the tutorials is... that they kinda doesn't improve your building. It is wasted time, because you don't create anything by just watching videos.
Instead of watching tutorials, open Minecraft and just try to build. Google for inspiration and use images as your reference. Imagine the thing and try to replicate it. If you don't like it, then tear it down and try to build it again until you like the result.
When I look at someone's building, I don't want to know how he built it. I rather look at small details, color palette, block combinations aso. Maybe I find something new and interesting to try in my next build project.
So I would suggest to spend less time watching how others do it. Instead do it yourself.

My advice is to keep all of your builds that you're unsatisfied with. Keep making more and more builds in this mosh of "bad" builds, each time trying to better yourself. Study your builds, and look for places where you could improve. "This wall looks a little bland, I could add some depth!" "Is roof looks strange, maybe if I make it out of a different block!"
When you throw away "bad" builds, you throw away a lesson learned, the things you don't like that you can later use as a guide of what you need to avoid. Hope this helps.
One thing you can do is hop onto a server and get up close with some nice builds and look really close at how some of that stuff was done, how stairs were used, how fence posts were used in conjunction with other things, etc... I do that all the time whenever I get on a server with good builds on it. And always look at the little details. You'll learn some neat tricks. But don't forget inspiration as well. Look to the real world, or pictures, or your imagination for that. I've been exploring the Mindcrack Season4 museum on the PlayMindcrack server and checking out builds there for inspiration and I've learned quite a few things from some of those builds.

That is what I do Arisilan. Referencing. >There are some amazing houses that exsist in real life that are awesome for building. This one is moderately easy because it's square-ish without a lot of difficult edges to consider. Look at that, a birch tree right out front too.. and now you can stain glass in the game. hope this helps.
Also, one of my favorite websites. adobe:KULER. shows you color swatches across the wheel spectrum. thousands of pallets. You can even design your own. this way you won't have to struggle with figuring out if one color matches another. In the upper left corner of the website click "explore" to review swatches that others have made.

. I know how you feel. I can build some decent stuff but I see These really good builds but can not make anything as good. But I would not quit minecraft. There is more to minecraft then just building good buildings. At least if you play survival mode. Anyway I don't think you should quit minecraft.
