I recently re-watched some old tutorials for beginners from a few years ago and in the one about using weapons and armor, the author went out at night to demonstrate how to kill mobs. It struck me that he wandered around quite a bit before he even found a mob. I usually play in peaceful mode (no mobs at all), but recently left my house at night in easy mode because I wanted some zombie meat. It was a terrifying experience - mobs were everywhere, and it seemed like they kept spawning right behind me, especially Creepers. It made me wonder if mobs are more prevalent than they used to be.
It is highly dependent on where you are, how long you been there, what is below you, and where/how you arrived.
Mobs can spawn anywhere in the sphere more than 24 and less than 128 blocks from you, but out past 32 blocks any spawned mob is likely to despawn after about a minute. There is a 70 mob cap.
Say you got a very large dark cave system about 15-20 blocks underground. You stay in roughly same area during day, likely all 70 mobs will be in that cave. When night comes, almost entire mob cap is taken up by the cave, almost nothing will spawn topside.
If you move about, mobs underground will despawn due to distance, and new mobs will be spawning. If it is dark, a fair share of those will be on surface.
If you switch from peaceful at night, 70 mobs will spawn real fast, and a lot of those will be on surface. You want it less stressfull, switch from peaceful when sun is still pretty high. Most mobs will spawn underground, and only a fraction on surface when night falls.
Or even better, build a spawner setup where you stay safely enclosed and can kill spawning mobs but they cannot touch you.
Once you have full iron armor and a shield, mobs won’t be that much of a struggle early in-game. While melee-attacking with a sword, learn how to time your attacks properly (there’s an attack cool down from 1.9 on, if you didn’t know: you have to let it fill in order to deal more damage to mobs). Shields (which go in your left offhand), can be used to protect you against creeper explosions, skeleton arrows, Blaze fireballs, and any kind of projectile...(correct me if I’m wrong.) Right-click to use a shield. You could enchant one with Unbreaking III + Mending so it lasts much longer and gets repaired with gained XP.
If you still stay unsafe with iron armor, get some diamond equipment and try to enchant it with level-30 enchantments. I’d recommend you to carry 3 diamond swords on your hot bar (1 with Sharpness V, efficient against non-undead mobs such as creepers, witches...1 with Smite V, efficient against undead mobs such as zombie (pigmen/villagers/husks), (Wither/stray) skeletons, phantoms...and 1 with Bane of Arthropods V, efficient against “Arthropods” (silverfish/spiders).) As for your diamond armor, Normal Protection IV + Unbreaking III + Mending on all pieces (along with Aqua Affinity + Respiration III on your helmet and Feather Falling IV + Depth Strider III on your boots.)
You could also make an AFK fishing farm to get enchanted books and enchant your equipment with them through an anvil.
Golden apples and potions can also help you in combat. There are 2 types of golden apples: the regular one which gives you 4 health back from Regeneration + 4 health from Absorption, and the enchanted one (glowing like an enchanted item in your inventory) which not only gives you a longer Absorption/Regeneration, but also Fire Resistance and Resistance! (Fire/lava protection + less damage taken by the player.)
Sorry if you know some of these, or you don’t know any of them, but it feels like you’re a newbie to me...(No offense intended.) And I’m not that good at explaining and detailling them, sorry... :/
Just figured out that when I'd turn 8 years old, the 23th of November 2011, my parents could have offered me Minecraft as a birthday gift. Sigh...
Fun but frustrating platformer. Saves me of boredom when I don't feel like playing Minecraft. Knowledge of 8-bit old-school videogames is optional tho'.

Ah, that is a great explanation for why I am immediately surrounded by mobs when I turn on easy mode. In future I will follow the advice and turn it on during the day.

Good info. One further idea I've had is to Flood - with Water, Flow(s) - All my Spawners, and keep it Water-underneath, to negate Creeper Blasts.
I've lost several of them to Creepers Spawning, there too. Almost makes me wish I could Silk Touch Spawners from one Dungeon /Spawner site to another Block-to replace-Block (site).
I've started yesterday entirely new world. Mind you, I've had played only on my single survival world, with the seed 299792458 (which is very important number, put it in google, you'll find why). That means I've seen in-game only that world for 20 months. And I haven't got bored with it. As I get to know it, it's more fun.
But yesterday, I've decided I'll try the newest snapshot. Why not… I squared previous seed to get new seed, 89875517873681764. And as a byproduct, I've found that at least in (this) snapshot, the spawn point is different than what amidst shows you if you load up 1.13.2 profile. I've appeared in taiga, which is great. Started as you usually do. Cut down one tree, get wooden tools, get stone, get stone tools, build shelter, get coal, but in middle of this, I've discovered reasonable amount of berries. So I had food earlier than expected. I've found some ferrum, so I crafted a shield. I've found sheeps, so I had bed. I got into some combat, but the most damage I took, was from some creeper, I had left 1 hearth, was about 40 m from my home. Guess what. Got home safely, healed, and the next day, when I had bed, I just slept through night. It's been like 5 or 6 in game days, and I haven't died yet. I started smelting stone, so I get stone bricks, started to build my new home not far, and everything is just fine.
Mind you, I am used to have supreme enchantments on diamond everything. Bow with what is effectively one shot, one kill. I am spoiled by riches of my empire. Yet, I have managed to not die, when I start from nothing.
And I am not experienced player. I haven't been in the End, I haven't killed wither, I just…mine, reproduce and kill animal, burn items like crazy, and most importantly, I build. I don't fight, because I don't have to, I have dark rooms and storage of mob drops. I live in age of plenty, and only looking forward to increase that riches.
Yet again, when I start from nothing, I don't die. IMHO, the game is easy. Sure, I should go with hard difficulty, and in fact, I will change it to that.
The main thing, however, is not at all about game difficulty. It's about you. Pick your fights. Don't be reckless. Play it safe. Sleep through nights, when you don't have armor. In nether, have that anti-flame potion. Use shield, and I cannot stress this point enough, use that thing. If some crazy serpertor is about to blow, don't run, face him, use shield, and you'll be just fine. Have food… All of this (except the potion part) is pretty easy to get.

They also enhanced the zombie AI a lot. I put one in a maze once, went right through it.
