I made 453 blocks of diamond from about 2,100 diamond ore mined in my first main survival world from exploring something like 3,000 km of interconnected caves (literally, from the stats; a quarter of the way to the Far Lands in Beta 1.7.3 or earlier, although including going back through the same passages). That was almost entirely obtained using Fortune III, less over 200 diamonds to repair my pickaxe alone (over 330,000 uses with Unbreaking III) and hundreds more for weapons and armor, going through a couple dozen anvils. In my current world, which I reset the stats for (saving them first since I like to see what I did later), I've made over 240 so far, although have only used a few for repair since I now use a mod for most tools/armor.
If you think that is a staggering amount of diamonds, consider how much of everything else I mined; for example, nearly 100,000 iron... and don't even consider coal, of which I filled up 8 double chests with blocks, plus the amounts needed to make nearly 100,000 torches and smelt all of that iron, plus gold (I even mine lapis - with Fortune III - another 1 1/2 double chests there).
It also took me about a month of playing to get all of that (over about 6 months). I've been getting stuff at a far faster rate since then though, largely thanks to a backpack mod and using better/faster tools and just more experience and MCEditing my base over instead of starting from scratch, and much bigger/denser caves (you can see a comparison here; both worlds use the same seed and the same scaling, I used 13,000 torches in one cave system alone).
I had half a double chest of diamond blocks all legit on a pvp server but took a few months. But on a faction server easy double chests just full of diamond blocks.
On a server, I found 56 diamonds with my Unbreaking III and Fortune III diamond pick. I was so excited because I found the most number of diamonds in my life, in two days.
I currently have 220+ left on the server I play on. Im not sure how many I have mined total on the server.(the server does run mcmmo and I use a fortune 3 pick)

5 stacks and a little bit more. No kidding. It was with a friend on a multiplayer survival world that we had for a long time, and those are only MY diamonds. He had even more than me.
I have found like one stack in my main world without any fortune enchantments. Maybe is because I make more cave exploring than branch mining, but I don't know how there is people that can find more than 100 diamonds in a single world.

You just have to keep looking for them and play the world long enough; the numbers I gave earlier seem incredible but have to be taken into perspective against how much I've explored (that's just my first main world, and only explored caves are shown, the whole area is over 4,000 blocks long) and other ores; for example, I've found about 50 times more iron ore; an average world has about 77 iron ore and 3 diamond ore per chunk, about twice as much as I've found, which is also skewed by only mining visible iron ore but always mining around diamond ore to see if there's more (veins often have diagonally connected ores) and caves being more common lower down, so the ratio would otherwise be even worse (of note, I mine more gold relative to iron than the ratio they generate in for these reasons; redstone is also about 8 times more common than diamond but I mine more like 6x as much because I consider redstone to be a "common" ore like coal and iron and not worth mining around). It also helps that exploring caves is how I spend pretty much all of my time playing Minecraft.

One of my last worlds I had roughly 2 stacks all legit with the highest fortune pick being a 2. I was on an island and had trouble coming in contact with any cows. I did manage to find a few to breed. My just last one I had about 1 st +40 some. I had a fortune 3 but didn't really cave much. This world I am exploring a LOT more. I have only been on this one for a week or so and have 48 mostly from mineshafts. Managed to find a mineshaft just under my pad. Pure luck.

(Obviously, the 8 is only counting diamonds that I found, since IC2 synthetic diamonds aren't that hard to get once you have the means to make them.)
