What you consider classic sounds very uninspired and dull, and pretty damn rude. Even luring creepers near things and setting them off takes more imagination.
Someone on here said something I found not too harmful and very creative. He built a huge box out of dyed wool and made it look like a present around someone's house.

I'm fairly sure flip-turning someone's life upside-down is against rules in many servers.
I'm no griefer, but I'd say something funny and creative can actually be pretty hilarious to all involved. Just pouring lava on something is pretty unoriginal and moronic, and will get you banned. You SHOULD be trying to look for a method that will temporarily p**s off the victim and make the admins/onlookers just laugh. Something like filling their house with sheep or turning every block the house is made of into stone as if it were turned into a statue!

If you really want to freak people out connect noteblocks to all their pressure pads. Then connect a repeater that turns on when a pressure pad is clicked, but never turns off. Surround these noteblocks with obsidian and hide them right under their precious home. I'm sure they'll try to find the redstone wire that leads to your little annoyance machine but make sure that path is long and winding and preferably leads through lava blades and pitfalls.

The best grief I ever did was lay TNT underground all AROUND someone's house. I rigged the ignition to a button they used to turn on their automatic wheat harvester. It took days of waiting and laying even more TNT, but eventually I had a giant octopus shaped area of TNT extending for about 30 blocks in every direction. One day the person harvested their wheat, and BAM. The landscape was so ugly that they were forced to move.
A lot of the common tactics are boring as hell - lava, TNT, fire, cobble-spam - all pointless.
House flipping and "boxing" are more interesting, although not exactly unique.
Some others:
* Build a fake hill over a house, complete with trees and grass.
* For a fortress with lots of tunnels, reroute the tunnels so that there's no entrance to one of the important rooms (treasury, farm, foundry). Don't just block the door, make it look like they're in the wrong tunnel.
* Create hollow spaces under a house / inside the walls so that monsters spawn there and make noises.
* More evil version - do the above, but with secret doors to open up the monster rooms, controlled by a switch outside the house. Trigger it when they're inside (for bonus points, it should seal the door too).
This thread has so many ideas... I like mine the best place a pressure plate, connect it to TNT but somewhere where it causes no harm and the user will be paranoid once stepped on.
I don't grief to ruin the server. It's more like trolling on a server.
I completely rearranged someone's house once and left a sign pretending to be one of those house makeover TV shows (domestic blitz, etc.).
Another time I used bonemeal and saplings to turn the plains around someone's house into a dense forest.
Making a peaceful mob grinder and depositing the live animals into someone's house can be quite interesting, especially when that person comes home to find tons of animals in his house.

First of all, it takes a considerable amount of time to break a furnace. It nearly rivals obsidian. Also, they're cheap to make.
Enter someone's house. Encase the house with a cube of dirt or cobblestone, and then place furnaces on the outside surface of the cube.
On a server with LWC, they won't even be able to remove the furnaces.
If you're short on furnaces, just fill as much empty space inside their house with it. It will look VERY stupid and take awhile to repair.
