The more portals the better. 23x23 (21x21 inside) is currently the biggest size each portal can be, so most farms utilise several of these in a favourable configuration, but more portals = more obsidian.
You then need to decide how to kill them. Water flows can channel the pigmen to a central point, then you have options -
(Note: It will need to be an AFK farm, with you standing in an area which makes sure any pigmen that spawn will walk off the portal edges into the water i.e within 32 blocks of the furthest portal corner)
They could drop a long way to their deaths without any intervention from you, but the drops rate will be small.
They could drop to a chamber where you kill them through a gap. Using a Looting III sword will increase drops considerably and you will gain nuggets, ingots, rotting flesh and gold swords which can be smelted for even more nuggets.
Killing them manually requires you to be in a safe place, and the pigmen come to you. You could aggrevate a pigman to get the others to converge on the kill point, or you couse use a water flow to guide them, but remember the max cramming rule could cause pigmen to die of their own accord if the kill area is too small.
If the portals of your farm are close to a portal you use for nether travel, then its possible any aggravated pigmen could enter a farm portal before they walk off the edge, and end up at your nether portal. You'll know this next time you enter the portal you use for nether travel and be surprised by a horde of angry pigmen! So you may need to either build the farm well away from any nether portals you use, or use redstone to turn on/off the portals, turning them off when you start the killing procedure. The redstone is not too complicated.
The farm in my world uses eighteen 23x23 portals, with a one block space inbetween, except for the middle two portals which have a 2 block gap. This is because my drop chute is 2x2 so i don't get a congestion of pigmen blocking the chute. The chute is off centre so my AFK point just under the portals can be in the middle of the farm, and links to the kill area below. The pigmen drop to a false floor around 20 blocks down, where they take fall damage, then the floor opens dropping them into a water collection chamber. This has an open edge where i can manually kill the pigmen, who are one hit kills with a Smite V sword and the damage they've taken. Hoppers along that edge lead to a chest collect the drops
