NOTE: An infinite item is one that has mending and ideally unbreaking iii, and which has a common use that gives experience to recover the damage. For this reason, infinite shovels, hoes, and other such items aren't listed, because the only way to repair them is by holding them in-hand while trading or after obtaining experience some other way, which is very contrived. Weapons and armours obviously get experience easily, but it is important to also consider ore experience with pickaxes and fishing experience with rods.

Note: I did not actually make/enchant 500+ pickaxes; I still play in 1.6.4 (or TMCW, my own version based on it) which does not have Mending but if you rename an item you can repair it as many times as you like so it is basically the same thing (and the cheapness of renaming aside, more balanced since you need to repair it on the anvil for a higher cost, both XP and resources, neither of which are an issue with my playstyle. I even added my own version of Mending to TMCW which just replaces renaming).
Of course, I rename (put Mending on) all of my gear; in my last world I even put it on a hoe (which are more useful than in vanilla since Fortune only works on crops if you use a hoe but I never came close to having to repair it since a diamond hoe lets you get over 18,000 potatoes per repair); and when 1.8 came out I made a mod that reverted the anvil mechanics (1.8 is the only version since anvils were added in 1.4 where you can't have "infinite" items. I never actually used the mod since I never updated to 1.8 but this shows my thinking about this change).

Not any more! Mending and Infinity are mutually exclusive as of version 1.11.1 (16w50a). There are a number of threads discussing the pros and cons of Mending versus Infinity on a bow for survival. Basically it comes down to personal preference, though before the Ender Dragon, most want Infinity.
Thankfully, I have three with both. Had I known they were going to make that change, I would have created several in advance!
As for your OP, Mending is most important to me for Elytra, and I think that should be on your list.
Otherwise, though I put it on my pick first, picks are largely disposable. Once I get a max-enchant sword, I want to keep it like an heirloom. So, I'm glad we have Mending for swords most of all, despite the fact that it comes in the most handy for picks.

Nope, I fished a mending-infinity bow alright. You can't enchant a bow to have both, but the loot table for fishing hasn't been updated for that in 1.11+. And they still work together just fine - apparently you can use commands to apply mutually exclusive enchantments together.
Thankfully, I have three with both. Had I known they were going to make that change, I would have created several in advance!
When i found out they had made that change and I had already loaded the new version, I went back to a neutral place in my world (an area i hadnt visited in the new version) and re-loaded the old version and made some more!
For me either a sword or pickaxe, especially on a silk touch or fortune pick.
Although on a pick is handy and very useful I slightly favor a sword, more but that's for me and my personal reasons. I already had mending on a Bane of Anthropods IV sword, but I had to do a fair bit of trading to get the 18 emeralds (Cost for mending on my guy = 1 book + 18 emeralds) and get mending on my sword. (Fire aspect II Smite IV, Unbreaking III, Mending) Well worth it though.

While I agree that Mending and Unbreaking III are important on Elytra, they aren't an "infinite item" as defined in your original post.

They're armour, and you recover experience for armour, weapons, and shields when fighting large groups of mobs. Just make an enderman farm near your local End City; that's what most elite players do (I've never been good at farm-building).

Elytra have no armor or protection value whatsoever, so they are not armor (wearing Elytra in place of a chest plate actually reduces your armor protection). But it's your poll, so I guess you don't need to follow the rules you created.

I suspect Elytra would have won the poll if it had been on there from the start. It's probably the most used item for many players, and they wear out more quickly than a bow or diamond pickaxe (Elytra really need both unbreaking and mending).
I would probably choose my bow. Not only do I use it a lot, I also made it prior to the update that nerfed Mending+Infinity, so I really don't want to lose it! Also, if you use a bow in your off-hand with a looting sword in your main hand, you can get the looting bonus for bow kills, which is great for collecting things like blaze rods and ghast tears. That really makes it an OP weapon, but it's the best thing about the 1.9 combat update (dual-wielding).

While I agree that Mending and Unbreaking III are important on Elytra, they aren't an "infinite item" as defined in your original post.
Undoubtedly the Fishing Rod, as it allows you to get all the books to make any of the others and also the XP to run the anvil.

By armour I meant you wear them in your armour slots. A pumpkin isn't armour either unless you're a snow golem, but it still takes up an armour slot.
Definitely Elytra. They're a pain to find, they break very fast, and not as renewable as tools and armor.
There's mending Bows and Elektra Wings?!! WANT! My favorite is my Diamond Pickaxe
