Build a landmark around the portal out of stone bricks, mark down the chords, go out and locate a fortress, build a cobble road back to the portal, then just sort of freeroam I suppose.

I usually use the F3 coords, but if I didn't use that, I would light my path to where I went with the occasional cobblestone, because, well... let's be honest. We usually have an appalling amount of leftover cobblestone.
To differentiate between the personal "you" you, and the more general "one" you. Like, if I just said "How do you find horses?" it would usually be taken to mean the same as "How does one find horses?", aka "How can I find horses?". But when I say "How do YOU find horses?" with the capital "YOU," it's obvious that I don't just mean in general, but rather I want to know specifically how you, personally, do it.
The only places I ever need to track down in the Nether are the portal, a Nether fortress and a Blaze spawner. I usually build small two blocks tall 1x1 pillars along the way with torches on the top to mark a way between those points.
