Unmovable blocks around the slime when the piston is *not extended*w cause no problems and it works fine. But unmovable blocks (furnace in this case) to the sides of where the slime will be when the piston extends... keeps the piston from extending.
I just threw up a quick version of this in a creative world and it worked as advertised with cows, sheep, skeletons, zombies & villagers; pigs sometimes fail (Pigs sometimes fall back down & get stuck on the pressure plate.)
[The pressure plate should be stone as the others will detect entities other than mobs&players possibly jamming the system until the entities despawn.]
I also tried with just a piston, slime block and 4 "unmovable blocks (furnace in this case) to the sides of where the slime will be when the piston extends"
and was unable to replicate what you describe.
Please post pictures of the build causing problems…

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
Sorry, I have no screenshots and already disassembled it in favor of another method that worked.
Basically, I had 4 furnaces around the slime when the piston was *not* extended. In that configuration things worked fine. But when I added two more furnaces one block up (right over the two side furnaces, in a position next to where thenslime would be when the piston extended) the piston would not extend any more.
The version was 1.12.2, playing on a survival server (skyblock mode to be precise).

Any idea what is happening? Is this a bug?

No movable blocks around the slime when the piston is not extended that would be stopped from moving by the furnaces?
Just furnaces, air, water and the piston on all 6 sides of the slime block in both positions?
What version of MC are you using, any snapshots or mods?
Just testing.
